Curry Chicken Salad Lettuce Wraps

Ingredients
- 2 1/2 c. grilled chicken breast, chilled and chopped
- 1/2 c. mayonnaise
- 1/2 c. apple, diced
- 1/4 c. roasted cashews
- 1/4 c. carrots, diced
- 1/4 c. celery, diced
- 1/4 c. red onion, diced
- 1 1/2 - 2 tbsp. curry powder
- Sea salt to taste (optional)
- Lettuce leaves
Preparation
In a large bowl, mix together the chicken breast, mayo, apple, cashews, carrots, celery, red onion, sea salt, and curry powder. Serve in lettuce leaves like a wrap or on top of a fresh salad. Enjoy!
